Soup is one of my favorite things to cook! I LOVE soup!! It also goes great with grilled cheese, so that’s another plus! Anyways, I’ve had a lot of veggie stock in my pantry for a while that I haven’t gotten around to using and I realized there was a cool looking recipe on the side of the box. Well, that was the perfect opportunity to cook a new soup!
The recipe is as followed (with minor changes):
2 tablespoons of olive oil
4 garlic cloves
1/2 teaspoons red pepper flakes
salt & pepper
1 head escarole, chopped
nutmeg to flavor (I used about 1 teaspoon)
1 (15 ounce) can of cannellini beans
1 quart veggie stock
2 teaspoons lemon vest
1 1/2 cups orzo added the last 10 minutes
Add olive oil, garlic, red pepper flakes, salt, and pepper and cook for about 3 minutes while stirring. Add the escarole, and cook it down. Add nutmeg, beans, and stock. Bring to bubble and add orzo. Let it bring it to a simmer to for around 10 minutes. When done, add lemon vest and stir it in. Make sure the orzo is cooked fully!!!
It goes great with a baguette!
I’m really glad I added the Orzo to this. Although, I may have added a little bit too much. Oops!
